Add the onion, garlic, and oregano to the sauté pan and sauté until softened but not browned, about 5 minutes.

If all of the liquid has evaporated, add 2 tablespoons of the reserved marinade. The remaining marinade may be discarded. Remove the sauté pan from the heat, and let cool slightly. Chop the artichokes. reserving all liquid. In a large bowl, combine chopped artichokes, artichoke liquid, eggs, bread crumbs, Green Tabasco, salt, and pepper.

Add the 2 cups cheddar, parsley, and cooled onion-garlic mixture. Mix thoroughly but gently. Do ONE of the following: Coat a 9-inch square baking pan with vegetable oil spray and fill it with the artichoke mixture.

Or coat an cup, shallow, mini muffin pan with vegetable oil spray and divide the artichoke mixture evenly between the cups. Top the artichoke mixture with the remaining ½ cup cheese.

Bake at ° for about 30 minutes for the 9-inch square pan or 18 minutes for the muffin pan. The frittata with be puffed and golden. If needed, broil for a minute or two to lightly brown the cheese topping.

Sauté shallots, garlic and chives in butter over medium heat until soft; place in mixing bowl. Add artichokes, bacon, basil, Parmesan cheese and Jarlsburg cheese; toss to combine. Stir in mayonnaise, lemon juice, sugar, salt and black pepper; mix well and chill. Remove stems and seeds from peppers; cut into 2 inch squares and place in single layer in baking pan.

Drizzle oil and vinegar on pepper pieces; season with salt and black pepper. Bake at F degrees for 15 minutes stirring after 7 minutes; remove from heat and let stand until cool. Spoon mounds of artichoke mixture on each piece of pepper; broil until puffed and bubbly.

Let stand until warm; makes Preheat oven to F degrees. In large iron skillet or baking pan, sauté onion in melted butter until tender. Add chopped spinach to skillet and sauté until tender; stir in chopped artichokes.

Add sour cream and cream cheese and stir until smooth. Stir in salt, pepper, red pepper and garlic. Combine in bowl the three cheeses; stir half of the cheeses into the hot spinach mixture. Spread remaining cheeses over the top; place in hot oven until bubbly about 15 minutes.

Our neighbors had a gathering planned so I offered to bring this recipe. Plus, it was a hit. Everyone loved them. This recipe is so easy to make and serve. This recipe travels well making it perfect for a potluck party.

When I serve these baked artichoke squares I cut them into about 2-inch by 1-inch rectangles. You could certainly cut them larger or smaller depending on your preference.

If you have more appetizer offerings at your party, go with smaller squares but if you have fewer appetizers to offer, go with larger ones.

You may consider putting each square in a mini or regular-size paper muffin cup for easier handling. Your guests would probably appreciate it. These cheesy baked artichoke squares could also be served as a side dish for any entree.

Just cut them a bit larger for a side dish portion. These baked artichoke squares pair nicely with a white wine such as a Pinot Grigio or Sauvignon Blanc, even a chardonnay or my white wine sangria.

If you prefer a cocktail, something light like a vodka soda or an Irish Buck cocktail. Something like a lager would be perfect. I think I found the recipe in a magazine or something.

I am not sure where artichokes originated; I am thinking in Italy. They are very much a part of the Italian recipes. We never grew them in Ohio so I guess that is why I never made recipes with them. They are grown in some parts of the US where the weather is warm and the soil is fertile.

The first step in learning how to cook artichokes is in the preparation. In the US the globe artichoke is most frequently cooked by removing most of the stem and part of the scale with scissors.

This process removes the thorns and makes them easier to handle. Then the artichokes are steamed or boiled and made ready for the artichoke recipes. Combine and stir together all ingredients in a medium bowl.

Turn mixture into a light oiled soufflé dish or 1 ½ quart casserole baking dish. Bake for 25 to 30 minutes or until golden brown on top. Serve with appetizer crackers or small toasted bread. Will they still taste okay room temperature?
